Help needed

I am building my 1st hardtail after many years of riding full susser's, my question is; can I take my spair set of DT Swiss rims fitted for disc brakes, remove the rotors and expect them to be ok with "v brakes".

Only if they have v brake rims. If they dont have the machined area they wont work very effectively and you would only damage them. Why not get a cheap set of disc brakes? You should get something under a R1000

If you want to buy new Id go for the Shimano entry level ones or Tektro auriga pro's. They should retail for +- R1500. But I've seen some juicy's for round about R1000 second hand on this site.
