Best bike for riding dirt roads - Eastern Cape ?

Am UK based road rider looking at spending sometime near Grahamstown in the Eastern Cape and have noticed a lot of dirt roads (and not that many sealed/tarmac). Do people ride dirt roads as an alternative to sealed (are they safe) ? What do people ride on them ?

 

Would a cyclo cross bike be the best weight/speed/strength compromise ?
