Replacing handlebar tape

I'm giving the Cervelo a full service and I'm replacing my serfas handlebar tape with specialized roubaix bar tape that I got from fritz pienaar.

 

This is the first time I'm replacing handlebar tape, so I'm a bit new to this.

 

Anyway, the serfas tape had gel inserts under them like in the pic. Do I use them again, or did they come with the handlebar tape. The gel inserts is also serfas.

Total disassembly took my 25min. Wonder how long it will take to replace everything.

On a serious note I have seen others of those inserts and they are purely there to make the tape thicker and absorb more vibration ie a softer ride on the hands.

That's what I thought, but I wonder how the ride will be without them.

 

BTW, just measured -1.5oC in the car. freaken hell and we had a braai outside my friend's house
