  1. If that happens you prepare for road rash in most cases. Lance just goes off the road, into the dirt, hops off, back on and goes on to win. We'll get there too with practice.
  2. Panicking - i know the feeling dynamite. All to well. Try unclipping ur foot as you slow down, before u stop, but keep a bit of pressure on the pedal but not enough to re-engage. That way as you stop ur foot is already loose. Keep trying - you'll get it.

Here's a tip dynamite Choose one foot that you will put on the ground when you stop, and only ever use that foot to disconnect. i use my right foot, no matter what, and now its instant - i can get that cleat out and on the ground in split seconds. I also used to hit the tar quite often, but have not yet since some one told me this tip.
