why are these studies always "male cyclists"?

Yes, that is a fair question. We are trying to study the physiological effects of certain training interventions. When we do these type of trials we need to keep the 'sample' of the population as homogenous (the same) as possible. This minimises the effect of other factors that could influence responses (gender included).

 

Female cyclists and athlete's in general are generally an under researched population.
