Will try doing this going forward - and will try to make of not removing wheels as much anymore.

A long shot but it could be that one piston is sticking more than the other. Remove the wheel and operate the brake while holding a cone spanner between the pads. See if one moves more than the other. If it does remove the pads and operate the brake with the spanner still in. Be careful that a piston does not pop right out. Clean the pistons and lube with what ever fluid your brakes use. Carefully force the pistons back in replace the pads and see if that improves it. If the piston still sticks the next step is to replace the seals.
