I recently bought a road bike with a 100mm stem. I feel a bit stretched out on the bike, and want to buy a shorter stem. I would like a 80mm stem, but hardly see any that length. Is there a reason for this? does it make the steering too twitchy?

As for twitchy... unfortunately YES!!!

 

 

 

The larger size Raleighs all seem to have this "stretch" problem for tall riders .... - not that I'm assuming you ride a Raleigh smiley2.gif

Almost all bikes have this problem in the extra small sizes.  They make the top tube shorter (so the fork is 2cm nearer) but make the seat-angle from 73 to 75 degrees (so the fork is 2cm further).  End result: size XS is actually the same as S, with a shorter headtube.

 

In fact, pretty much only Cervelo, Cannondale, and Time don't make this mistake.
