I'm currently rolling on WTB Vulpines. Nice and large volume, and still only 495g of pure love.

I have used Maxxis MiMo's before (395g), very thin and easy to cut.

Have also used Conti Twister Supersonics (350g). Very nice, but you also have to choose your line nicely.

Also, Panaracer Speedblasters (420g). Nice fast tyre, but cornering knobs tear off after a while.

The Vulpines @ 495g seem bombproof.

Ofcourse, all these are non-UST tyres and made tubeless with Stans strips.
