I run a 1x11 11-50 sunrace cassette with an XT8000 rear deraileur/shifter and an absoulte black oval 36T upfront.  So basically stretching the 1x11 as far as it will go and it works great, never really had any gearing issues

I'm running the same, except normal 36T upfront.. there is always just that one gear I(or any bikeshop) can't seem to index right. And if I get that one right, another one starts jumping. Got it close to perfect a few times, but then on occasion it slips down from the 11T once in a while.

Well i am picking bike up end of today as i am changing from 2.25 to 2.35 tyres front and back, and doing the usual service, so holding thumbs gearing is smooth. As JB said, i can always try get an extender, last last resort, a different derailer, but lets take it one step at a time.
