I used a similar technique. I used an old jean, to cover a Sella Italia SLR. I used white wood glue for the top of the seat and contact adhesive for the sides and bottom. After letting the contact adhesive dried i put some more wood glue on the bottom over the material and plastic just to make sure it stays down.

I did find that starting the sticking proses is easier from the middel, and just cut a rough shape of the seat. Final cutting was done after the top was glued, you don't have the risk of cutting a too small piece this way
