Number one will be the wheelset and tyres.

Depending how strong you are going to a 1x11 Sram setup will be good.

Those two will lose you signifigant weight.

Stans rapid are 455g for the 29 versions and the tyres are Racing Ralph evo TLR. Not much weight can be saved there without significant expenditure. I'd leave the wheels. Crests are 70g lighter per rim though.

1x - yes. You'll save around 400g or so. Your existing cassette is also heavy abd can be upgraded to either a praxis 10sp 11-40 if you want to go 1x and not get a whole new drivetrain. All you'll need is a new chainring to fit your crank.

Crank is heavyish. But to lose weight there is an expensive exercise.

Convert to tubeless if you haven't already done so. That'll save quite a bit of weight and is the cheapest to do.

From there it's minimal gains.

Bar will probably be a bit heavier, replace with carbon.

Saddle may be improved upon. Maybe one of those plastic webbing ones from china / eBay. Darn light and cheap as well.

Seat post. Standard one is probably heavy but in 27.2 you need the strength as tbeyre weaker than the 30.9 and 31.6 cousins and flex a lot more. Carbon again.
