Rearrange your casette so that there are two spacers either side of your chosen cog. Put your chosen cog in the middle of the casette and the other sprockets on either side. Then turn your limit screws to the maximum so that you can't access those gears.

Or you could also ask your LBS for spare spaces and just put a single cog on your freewheel body and make up the rest of the space with spacers either side?

Since your middle blade typically has 32 teeth and Jules's suggestion is the most "fuel"-proof, I'd suggest either your 16 or 14 tooth sprocket for a tour ... assuming that's road (but keep your 12 tooth sprocket handy, dependent on terrain). Enjoy!
