I want to do this. so 6 day's are not cast in stone. maybe 10.

MTB would be my first choice, and the ofroad choice seems like the more adveture's idea.

i cycled from joburg to capetown unsupported, on a mountain bike with slicks on. took me 12 days including a very-much needed rest day. faced a constant head wind between komberley and 3 sisters, and from oudtshoorn to barrydale. the panniers added losts of wind resistance.

cycling up huisriver pass with panniers also wasn't that much fun.

did it solo, and the first time i flt a little unsafe out there, was when a guy at the worcester ultra city asked too many questions about where i'm going & what time i planned to arrive where

Enjoyed the R62 through barrydale, montagu, robertson, worcester and over du toitskloof - that was the best part.

enjoy the ride, and keep us updated with your progress!!!

oh, yes, have cycled offroad with panniers before, on the 'great glen way', i think it's called. Panniers on dirt road work well, but on singletrack it's not much fun. next time i'll rather leave the luggage somewhere, go play for the day, and travel further the next day.
