For Tuscany MTB/touring, look at this as well:

Basically the route(s) of the Erocia that are made more accessible to English speaking cyclo-tourists the last year or two.

 

 

For the Como lake district look at this: http://www.cicloviadeilaghi.it/home.jhtml Maps (1:250000, 1:50000) are also available as pdf's there, but also in hard copy in tourist offices. Probably more road than MTB but a special place to visit is the Madonna del Ghisallo and the bicycle museum there. You might even have a beer with RHWink

There is 30 MTB routes (from 2 hours to 5 hour traverse routes) in a booklet available. I cant find a pdf copy on the web site, but I'm sure you can email them. Ask for "VTT2008 - Les Guides Randoxygene". It contain route and profiles info.  Be warn, it is not flatOuch
