what do you guys think? They are a carbon wheelset. I'd use a set like that for everyday road training and/or racing. Any pros and cons you guys can think of? Or perhaps past experiences? Thanks a lot, your help is appreciated

An 85mm/50mm is more a Time Trial set-up!!

A 50/50mm would be much more beneficial for you! An 85mm wheel is more for guys and girls who don't want to use full disc wheels but still want the extra aerodynamics at the back half of the bike.

An 85mm won't be too bad in the wind if it's at the back, it will only reek havoc if it is on the front with a cross wind as the wheel is obviously more moveable cause of the steering capabilities.

Trust me 50/50mm will be your best bet, also trying to sprint an 85mm at the back will be alot tougher than a 50mm, at speed it will fly but you won't have that initial acceleration that you will enjopy with a 50mm. Not sure how competitive you are but as Lance says.. "Every second counts" and when it comes to that last 50m sprint a milli-second could make the difference.

As far as I know the guys on the major Tours don't race the stage races and classics with wheels bigger than a 50mm front and back...

50 mm wheels in a gale wind makes a huge difference in your riding and also isn't safe, the front wheel gets blown all over the place..

Train on what you have and keep them for races and weekends.
