Could someone please tell me what CRC mean by 3k or UD with regards to Ritchey headset spacers?

They are referring to the carbon weave. 3K is the standard weave that looks like little squares, and UD is undirectional, giving a more flowing weave of the carbon.

UD is Unidirectional Carbon and 3K is 3000 fibres per square inch or meter or something in the carbon weave on the surface.

 

If you look at the pics of the spacers, you will see the finish is different on each.

 

Its so you can match the finish on your bars or stem or frame.

Another question, sorry I am technically challenged. 1.1/8" is that 31.8mm?. I want to purchase some parts but do not want to get the wrong ones. I currently have 120mm (31.8) FSA stem, am I purchasing the right size?

1 1/8' is your steerer tube diameter

31.8mm is the diameter of your handlebars - generally refered to as 'OS'

 

This is the standard for most modern bikes.
