They'll work just fine. It's all about personal preference.

It used to be a problem on the first generation Quartz pedals. All sorted on the second generation range. They're awesome! I recommend you use the 20deg(release angle) cleats when you're a rider who prefers getting a lot of "air time". The 15 deg are for XC racing.

It means that there's some degree of movement in your pedal/foot when clipped in.

Seeing that mud is not a living thing, how exactly does it manage to "EVACUATE" the pedal?......That's the French for you. They're just trying to state that there's no obstruction.....and the mud "flows" through the pedal.
