  10. Hi Ed - its a rolled pancetta - essentially an Italian dry cured bacon. But I dry it enough so you can eat it like a cured ham. I am generally pretty awesome, but thanks!

  13. After 3 weeks - the wait was killing me!!!! Its pretty good, could be a little drier for consumption as is - but will be great for cooking with. I went a little heavy with the pepper, but its not unpleasant - kind of like a German pepper salami - nice with a Merlot on such a chilly day! I'll give the next one another 2 weeks before I take it down.

  20. I was in the granite/marble game for a bit(as an employee) and we once did marble for a home(palace) in Saxonwold in Jhb. The final invoice for all the stonework was in excess of 10 million. JUST THE STONE!!!! Ja Nee, boggles!

  22. No, I don't plan on curing any flies.... I have some of those hanging fly trap thingies on the periphery of my property, which draw any flies away from the house. And to be honest, I haven't seen a fly for weeks- so I am hoping it wont be an issue. Wasn't with the first experimental pancetta, so I am keeping my fingers crossed. Also ant proofed where I have hung them, and I have a fan on lowest setting circulating air on the meats. I am planning to build a curing cupboard when I tackle the big stuff like prosciutto, but that will only happen when we are in Australia (couple of months)
