Hi,

I'm pretty new to the site and "modern" mtb. My question is which pedals release the easiest as i've had a couple of knee ops and also want to avoid the tuck-and-roll dismounts?

Eggbeaters were a bit too tight for me, I'm now on Time Atac XS pedals, they have 3 settings for tension, easy to clip into and out of, shred mud very well and have a pleasant snapping sound when you engage :)

Try Look Quartz as well. You can adjust the exit angle by using different spacers under the cleat on your shoe.

Eggbeaters are probably still the easiest to get out of in my experience.
