Jace, I do think there is a market for a bike shop keeping a high end race ready rental bike just for the odd occasion one of their customers need a bike urgently. Perhaps make a demo bike do double duty? It could be very good PR for the shop. Whether it'll work in practical terms I don't know because the high end bike cost an arm and a leg and it may not see enough use to make it earn its keep.
