We are spoilt for choice here! I wouldn't base your decision on distance. We have some big climbs. You can easily do 1000m climbing on 30km ride.

 

Mont Marie, Eden and G Spot are a must do. If you start from Eden Forest Parking ( https://goo.gl/maps/6DvTpP3k7ND2 ) there is a board showing the routes. There are a few trails to choose from so ask around while you're there. And you get to ask someone where the G spot is...  :P

 

Bottelary Hills trails are a good mix of fun and fitness. We ride from Asara (https://goo.gl/maps/7Djt1TQroq72). The trails are well marked with different route options. Do all the extra bits! You will not be disappointed.

 

Jonkershoek is always a winner. Ask around for route suggestions as there are many! Or spend the day there and explore. Bring your climbing legs. 

 

Helderberg Trails have beautiful singletrack that you can explore for hours. Lots of different sections. If you're wanting to do 30+ kms there, you'll need to do a bit of climbing.

 

Oak Valley and Paul Cluver in Grabouw are fun. If I had to choose, I'd say Oak Valley at the mo. They've done a bunch of new stuff there. Each are about 40km. Or you can get a permit for both and combine them if you have time. The full loop is about 70-80kms. The trails are mostly well marked. 

 

Welvanpas in Wellington and Rhebokskloof in Paarl are phenomenal. Beautiful singletrack and views. About 30 kms each with decent climbing. You could do both in a day if you're feeling strongs.

We did a similar trip a while back. Based in Paarl, we did Boschendal, Rhebokskloof, Welvanpas Black, Jonkershoek and G-spot.
