My honest opinion is that they will not last. I bought those same wheels for my wife and as she had stopped cycling I started using them. During a recovery ride a spoke snapped on the rear wheel and I weight about 100kg at that time. My riding buddy had Eastons and constantly broke spokes on his rear wheel. They were more at the repair shop than on his bike. Rather have wheels build up for you.

Where does one go to get a set build up for them? to the LBS? or do you know of a recommended wheelbuilder in Durbs?

A bike shop quoted me R3 500 for these wheels which was basically double what the equivalent Shimano wheel costs. They might be a good wheel, but are they worth paying double for.
