Nothing.

Just take off the current "Big Blade" and middle blade and put the new "Big Blade" on the middle blade location.

Set up the FD limits and off you go.

What Crank and shifter set have you got? If its XT and I think the new SLX stuff you can switch the shifter from 3x to 2x mode underneath.

There is a small plastic screw switch.

To change upfront it just a matter of taking the baldes off your existing crank and replacing them with the sizes that you require. you shouldnt have to do much work on setting up your front deraillure.

Yup. Spacing on double and triple is identical. You can use same FD and Shifters.

I just did it on a Sora system and it works 100%.

Big and middle, you will be able to find a wider variety of sizes and the shifting on the Fd for 2x is set for the top 2

If it's MTB then consider changing your 44T big ring for something a little smaller, like a 38T (which is generally the standard for 2 x 10).

Most granny's on a 2 x 10 are a 24T, but I've found a 26T to be ideal for me. Maybe get both and experiment with what works best for you (they're a couple hundred rand each so won't break the bank).
