It's an evening affair swapping components over to a blank frame, IFF everything is compatible and you have enough knowledge and the right tools. The crank is probably better to take to a store as they'll have the right kit.

 

Is the mongoose disc or vbrakes?

Most 26 frames will be straight steerer, but you might find one that is tapered.

 

The Internet is a home mechanics best friend. Most manufacturers have decent manuals online and plenty of show you how's on YouTube

The biggest issue you'll have going from an XS frame to an XL frame is that the steerer of the fork will be too short.

 

This would be my biggest concern. Also, often smaller bikes have shorter cranks. These will probably transfer over to the bigger frame but are not ideal.

The sales guy at Solomons told me that I'd have to use wonky adapters or purchase a new fork - for R3000 (equivelent to my current one) - if I want to use a larger frame. 

 

Seems like I've got no way out here. Don't want to spend that kind of cash on a 26"er.

Yeah rather add an extra R2k and buy a new bike then. Giant Durbanville are selling 2014 model Giant Talon 4 for R5700.
