Never would have occurred to me to cook that on a Weber. How does it compare to the oven? (Besides saving a ton on electricity)

Yellowtail definitely worth the effort. Yellowtail/angel fish is, in my opinion, fairly similar to snoek. There's lots of different ways you can cook all of them on the fire, but, I find keeping it simple is usually the best. Sepia's recipe on the previous page looks really good Though in contradiction to what I just said, my personal favourite at the moment is this.

Haven't tried a zest like that, will have to give it a go.

Are you using the whole rind pieces or are you you making a lemon zest? I personally don't like the whole pieces as I find the parts where it lay have an overpowering lemon taste.
