Advice on converting old road bike

I've got an old road bike lying around at home that I want to convert to a SS for commuting. What rim/tyre sizes do you get between the normal road tyre and MTB tyre that will fit a road bike i.e wider than road, but smaller than MTB? And do you get those in tubeless?

You can go Conti Gatorskin 28mm - more common on tandems

 

Or if you want something a bit more off road, Conti Cyclocross 35mm but then you need to make sure there will be enough clearance in the fork and brake caliper

thanks. would those cyclocross tyres fit on the standard road rims?
