My existing MTB shoes gave up after 4 years of riding and I had both my bikes(MTB, Road) setup with those pair of shoes. Do I need to redo my bike's setup (Saddle height etc), after changing shoes ? I went from a pair of Scott to Giro.

I put the cleats as best I could in the same position as the old shoes.

What is your guys thoughts ?

You can go for a cleat set up but if you sure they in the right place then it should not affect your saddle height.

If the cleats are not in the right place this will affect the bend in your knew. As a rule of thumb, the part of the knee just behind tour knee cap should line up with your pedal axel.

If its been a long time since your last setup then it may be worth getting everything checked out again.

Good advice that, especially if you are somewhere on the slippery side of midlife. In short, we change, and our bike fit should change too.

I also got new shoes about 4 weeks ago after a few years in the same ones. I went for a ride in the new ones, and it actually felt like the new shoes are a little taller. Adjusted my seat height probably about 2mm, and it felt right again. It could also be the seat post that traveled a bit....
