I had a similar issue, turned out i had a damaged link that would pick up and kick off. removed the damaged link in the chain and all is well with the world again.

Will check the chain.

I had a similar issue but harder to diagnose with a used chain and cassette

Replaced the cable housing and solved the issue. I had priorly  replaced the cable but not the housing. IMHO the housing wears way before the cable ...

Would the removal of the cable/cable housing not have resulted in the need to reset the gear indexing?

I'd guess your indexing was out initially and taking it apart and reassembling it forced you to re do it and get it right?

Nope. Worked fine after replacing cable. Then started its ****. Luckily I had 2 wheels to try and rulled out cassette. Chain still in spec, therefore thought I'd give casing a try. This was on my road bike with Ultegra 10sp. On my MTB with Eagle GX I've learned to go to housing first if there's an issue as B screw etc Al set right over time....

I had forgottten that this is a KMC e-bike chain CWC sent me when I ordered a normal chain (seems they had no stock of what I'd ordered). They assured me that it will work fine. Seems okay although the shifting isn't as smooth as what I've had with Shimano in the past.  When I opened my box of chain bits and spares I found the old packaging for this chain and remembered. I changed the quick-link for a normal and while its not perfect it is much improved. Now it only slips sometimes if I'm up on the pedals. *sigh*
