It is the whole bioavailability of the food as well, not just components.

I read a study about eggs once. Basically a raw egg has a lot more protein than a cooked egg. But you can barely digest the raw egg's protein. So by eating a cooked egg you end up with more protein even though it has significantly less protein purely because you can digest better.

It might be my age, but gels in general seems to simply slap me to the ground. These bars (did the Epic this year) helped me a lot in training, kept me feeling more normal during and after rides. I do use Named Hydrogels, when going gets really tough, but seems to crave more normal foods as I age. It might be the honey that they have in the bars... All this said, I'm not super scientific about what I consume on the bike. I just go for what makes me feel okay.
