Check whether they pay out on insured value or replacement value. If the cost of the replacement model goes up a few thousand thanks to inflation and exchange rates you don't want to be left paying the difference to get the equivalent bike again.

I think physio's are better. there's no evidence to show that a chiro can 'manipulate' your bones or joints straighter (though having your back clicked is really satisfying and the exercises they give you are helpful). ultimately your muscles govern all so a good physio would be a better bet.
