I have always used the 'chain around the big and big plus 2 links' school of thought on my 'normal' 3*10 setups.

 

Is this still valid for 2*10 or is there a better way?

 

Yes, you use the same method for road and mountain bikes.

Cant see why that wouldn't work.

 

Thats the angle which would require the most amount of chain length, so it gives you room for error.

Shew didn't realize weight mattered so much to you :)
