My rear brake always feels like it is binding on an uphill. Weird, every time I stop and check it is 100% fine

Try pumping your front wheel slightly less than your back wheel (about 10% less). It's because the bulk of your weight is on the back wheel most of the time so it feels not as hard as the front.

Suspension bushings or bearings that are worn can make the rear end feel somewhat like a soft tyre, a squishy side to side movement, perhaps it is that?

What pressure do you pump and how often do you check?

Sorry, too many public holidays made me stupid, I'll have to learn to read properly again.

About 8 bars... ..check it about once a week ...will check tomorrow ..on the tyre it states max 8.5 bars

I had that ... somewhere between the BB wearing and reseating the the right pedal, it turned out the blades were just touching (you have no idea how minutely) the chainstay under heavy pedalling.

Olaf at Crosstown Cycles managed to track that down somehow. It was enough to make the bike just feel lumpy ("lomp" is such a good word) and heavy. When he finished, she was like a frisky stallion (mare?) and a whole new bike that became an absolute joy to ride.

If your headset is worn and notchy, it presents as a rear wheel that fishtails.

Life the bike by its neck (stem) and turn it from side to side. There should be no binding or notchiness.

Road bikes are particularly prone to headset indentation.
