I believe irideafrica uses GIS, you can get free downloads and they're valid for 30 days.  It can get tricky on some of the information, but there are plenty of online tutorials and forums that you can reference.

Perhaps chat to the guys at EasyGIS? they did the nav work for Sani - so might have some insights.

 

The race director for Epic might also be a point of call - Cheri??? - she used to show some great route overlays on what looked like 3d google earth pictures.

Google Earth can produce 3D trails. The Pro version is now free which allows you to take hi-res screenshots. On the downside I don't think you can produce a "terrain view" or elevation profile of a specific route.

You can use GE to map the tails along with elevation profiles. It gives quite good info but, the trouble with areas without dedicated loops it will be hard to do when you piecing portions of the trail network together as you'd have to generate a "path" for the ride you propose to do, to get a complete elevation profile.

 

Below is an example of the trail for on of the enduro trails we used at one of the recent events.

The red arrow gives trail info at that specific point on the the profile.
