A normal 56 in classic sizing should be fine, but I'm not convinced about the Giant.

 

I'm sure that in Giant speak, a 56 is an Xtra Large.

 

Just double check from where the 56 is measured. If it is from the centre of the bb to centre of top tube, then it will be too big. If it is measured from centre of bb to a virtual point where a top tube would normally be (a straight top tube), then it will be fine.

Giant bikes seem to be one size larger than they quote, so if you ride 56 on other manufacturers, you'll ride a 54 giant. Same as most of the Raleighs from what I've noted.

 

I think it sounds slightly on the large side for you, as I believe the guide chart is 185cm for a giant 56 geometry. Shortening the stem to make it fit will only cause twitchy handling.
