rather give centre of BB to saddle. geo with a BB height that differs from your current ride will give wacky results. Note, this will NOT be straight down and will be angled like the seat tube.

 

I'm 179 and ride a 54 Canyon, yet a mate of mine who's a few cms taller rides a 61 Trek.

Inseam length will be a big deciding factor.

I am 1.86mts tall with a 91cm Inseam and I ride XL mountain bikes and nothing under 60cm Road bike frames. In fact 61-62cm road frames are more comfortable for me.

I would say ride the bike and see how it feels, but almost certain its going to be too small IMO.

I'm 1.78 with a inseam of 85 and ride a swift 56.5 comfortably.

I am 191cm and ride a 59cm road bike and XL MTB. I was told that if I want to get a gravel bike I should consider a 58cm or even 56cm. The shorter top tube will give me more control over the bike on single track. Is there any truth to this?

I am 175 and ride 54 Niner RLT gravel bike and so I'd say a 56 would be small for you.

The Niner bike sizing chart puts you bang in the middle of the 59cm range and a few cm out of the 56cm range.

My opinion is that unless you have a really short torso and arms I'd stick with their recommendation.

 

Edit: Best idea is to consult a fitter. Spend a few hundred rondts to save many thousands of rondts by buying the wrong size bike is a good bet in my book. The comfort and feel of the right size bike is worth way more still.
