  1. Rode many miles to school and all over the place when I was a kid. Then motorbikes took over for quite a few years. Got rid of them when kids started arriving (decided I wanted to have a decent shot at seeing them grow up). A while back my youngest got a bike and in order to let him ride a little further than our drive I got one a few months later to be able to ride with him. And the bug bit big time.
  2. Yep there are some seriously cheap bikes in the classifieds. It's great that your wife wants to join in, mine gets the shakes and runs screaming in the opposite direction when I try and convince her to cycle.

  4. My ten year old has less of an 'entitlement' attitude than this. It's an awful attitude. Me, me ,me and sod how hard the rest of you work to try and do things correctly. In the end it is down to people like this that negotiations may never bear fruit.
  5. I'm open to negotiation on some kind of swap deal with our oldest going the other way. Dependent on you promising to do better at school that the current make and model we have.

  10. Thanks for the replies guys. My little one has a fairly well developed sense of self preservation and doesnt do anything daft without checking it out first. He did get to go through most of Faerie Garden a week or two back with me walking behind him pushing a bike with the worst puncture I have ever seen (we rode down from Silvermine and my tyre literally shredded just before the 'My roots' entrance). But the fact that I was moaning and didn't want him out of my sight kind of ruined it a bit for him. Oh and he took one look at the bridge and gave me the *are you mental?* look. He always wears a helmet and has the knee and elbow pads but isnt keen on them, and on past performance I appear to be the one in most need of them...

  13. 20 ml white wine vinegar A little ground black pepper 2 teaspoon of english mustard 1 teaspoon of sugar Half a teaspoon of Salt Mix for a few seconds with an electric whisk. Then add 2 egg yolk and whisk again until it starts to thicken slightly (leaves lines in the mixture) Gradually add oil while mixing until you hit the consistency you want. If it starts to split just add a teaspoon or two of boiling water and it should sort itself out. Takes about a minute, tastes better than Hellman's and costs about a tenth.

I'm pretty sure you know this already but thoroughly chill the dough and the butter before starting, then roll out the dough and only when that is done take out the chilled butter and roll that out. Place it in the middle of the dough (fold the dough over so there is one layer under the butter and two over it) then wrap in clingwrap and chill again for at least an hour. Try not to touch the butter with your hands too much. Repeat the folding process and then wrap in clingwrap and leave it in the fridge overnight. The next day is when you get to shape, prove and cook them. It's all about the chilling and the time. You can't shortcut anywhere on croissants.

  18. Get yourself a seperate cake mixer if you can (the type that has a dough hook as well as a balloon whisk) I killed my Kenwood by using it for too many heavy doughs/mixes.
  19. I used to work as a chef for many years in 4/5 star hotels in London and locally. This led to one of the more stupid moves I have made and that was not only to tell the nice young lady that was to become my wife that I could cook better than her but to then go and prove it by showing off. She hasn't been in the kitchen for 10 years now. Bugger... Anyway heres a very easy recipe for bran muffins (great for a mid ride snack) - 2 large eggs 300gm brown sugar 125gm sultanas 750ml milk 25gm bicarbonate of soda 5gm salt 300gm cake flour 95ml oil 200gm all bran flakes The recipe can get all long and difficult here but it works just as well if you do this - throw all the ingredients (except the sultanas) into a blender/processor and blitz for a couple of minutes. Mix in the sultanas seperately. Leave in a fridge over night. Bake at 180 for 30 minutes. You should get 18 to 24 muffins out of this.
