A sidecutter works even better if you heat the small section where you are going to cut with one of those small mini butane torches. Even a crappy sidecutter then cuts the cable, but a side cutter will not cut the brake cable housing or derraileur cable housing. It will just press it flat before cutting. Cut it with some old cable inside then it cannot press flat.....

The major difference I find is that when steel starts to crack/break it gives you a long warning before it goes completely whereas carbon gives you "Hincapiesque" notice!!! The second aspect is that whilst it is heavier than carbon the ride is far more comfortable and forgiving on a steel machine.
