hence the faux carbon top cap?!

Parrow as in paranoid, not jack parow if that's what you meant.

The fake carbon top cap come with my first "proper" mtb so I have carried it across to each "new" bike I get as a keepsake

Get a three bolt stem?

I have a ritchey stem on one of my bikes which uses 3 bolts - that way, at least two bolts will always be fully engaged

Thanks, will keep my eyes open for something like that

Shave the headset at the top a little. Some pro's do/have done this to get more slammed.

Really not helpful advice. Why would you want to compromise the integrity of the upper bearing cover in any way by "sanding it down"?

Either change the headset for something flatter, or change the stem.

FSA had a stem that measured 34mm stack rather than the more common 40 stack, so using this option will allow for a spacer or two to be added also.

do some shopping, especially in the dark corners of some of the older shops (Linden cycle, Westdene cycles, Cycletech) and you might find something useful.

In answering Schnavel:

Its not really about the number of bolts being engaged. Clamping on/over the weakest crush point of the steerer tube more than 1-2mm is never great, and the 3bolt stem may well have a bigger stack height which makes the whole issue worse.
