I fall into their small category....

I ride a medium bike with a top tube an inch longer  than the canyon and seat tube half a degree slacker and I am comfortable. A bike with a 57.5cm top tube for me will result in a 110mm stem which can work if the bike has a steep headangle. I am pretty flexible so that may allow me to size up.

However, I notice that the Canyon bike fit tool consistently brings up a bike size recommendation a size smaller than I would ideally like to ride. this indicates that their bike fit philosophy is tuned to deliver a more racy set up.

I can ride their Lux in a size small but then I need a set back seat post and longer stem.

the smallest raciest bike isn't always going to be the best bike for you considering how you want to use it.
