In my case you are 100% correct here. Takes time to get used to drop bars and gravel bike geo when coming from an MTB. So don't count that out.

The Evil CH is the worst riding gravel bike I have ridden. Absolutely horrible. That’s saying a lot because I’ve owned 11 gravel and monster cross bikes and ridden even more 😉

Ideally from what you’ve been describing. The Merida Silex model, before the current model updat (2023/2024) is a what you’re after.

More of a hardtail geometry with relaxed angles and taller head tube which means a higher stack height. 
The Evil is bit more of an all trail shredder, you’re looking for something more balanced. At least going by the discussion here.

Specialized has the Hover Bar - same concept
Flipping the stem up will also gain a bit of height at the front
