  1. Try cooking "next to" the fire, as opposed to the conventional "on top of" the fire method. Like they do with Brazilian barbecues. Two advantages: 1) indirect heat, and 2) the fat doesn't drip onto the fire and flame.
  2. For us Capies from the Free State it just isn't up to scratch.
  3. I buy my wood from a Namibian hardwood distributor here in Cape Town, and have to admit that I do worry about the sustainability of using kameeldoring or sekelbos. Even if picked up off the ground (for which some folks have a permit), I'm sure it has a negative impact on the biodiversity of the area. But hey, I have two solar geysers to numb my conscience and keep my braai passion alive.
  4. I only ever use some form of Namibian hardwood like Kameeldoring or sekelbos - or my trusted Weber Genesis gas braai. But NEVER charcoal ...
  5. Pork belly on an open fire Buy a fresh belly from a butcher (about 30 cm X 20 cm), and ask butcher to cut off rib bones and score the skin (NB!!) Make a generous fire using a hard wood (e.g. kameeldoring) Grind course salt onto both sides of the belly and some fresh lemon juice (both skin and flesh sides) Put belly into a rooster and stand it upright next to the naked flames, flesh side first (not too close - about 15 cm from flames) Keep turning upright rooster NEXT to fire for up to FOUR hours (1/3 time skin, 2/3 time flesh) as fire settles and forms coals (which eventually die down and lose heat) Be careful not to burn skin (crackling) but allow it to "pop" or "crackle" Serve with creamy mash potato and apple sauce (my wife makes home-made sauce but don't ask me how - Purity Baby food also does the trick). Simple but magic!!

  13. ... very. The loose forwards don't get me very excited based on current form. And a very interesting bench. And Le Roux trumping Lambie in the starting 15 .... mmmm? But it's only Italy remember. And as I've said a few times this season (eating humble pie), Vermaak derserves to be 9.

  18. He's got serious talent and has shown it before, no doubt. But as with Bismarck and Zane, he's had injuries this S15 and in his case there is some serious competing talent on display in the midfield. I'd be keen to know if you think he will start in the starting test 15? I think Serfontein will start next to Jean, which implies Juan potentially on the bench. And depending on how the starting 15 is made up, the bench 7 will want flexibility (e.g. Pienaar at 9 or 10, or Gio or Willie le Roux at 11/14/15, Coenie at 1 or 3, etc).
  19. Have to agree about Kirchner and Bismarck. Lambie should be 15. Problem is Sharks played him at 10. Pienaar probably in to cover at 9, 10 or 15 from the bench, and to cover for place kicking. Van Zyl the loser there. In my opinion the biggest injustice was De Jongh in but Ebersohn out. Victim of Jean's captaincy, which might come under pressure this series.

Well done Bulls - you outplayed the Cheetahs in three key aspects of the game, viz. territory (read Morne Steyn), lineouts (read Juandre Kruger and Flip vd Merwe) and the breakdown (read Stegmann - 1st half). And then Serfontein had a blinder. So the Cheetahs were beaten proper. No soft tries, no bad ref decisions. Just that the better team won on the day.
