Not necessarily, my 10speed cassette fitted on a 8speed freehub and vice versa.

I will have a look this afternoon to see if the same is true for 9spd freehubs

Yes, that is true. I was referring to the use of an MTB derailleur.

 

Provided it's a Shimano/SRAM cassette it will fit an MTB freehub

Shimano cassettes since 8 Speed are compatible with 8, 9, 10 and 11s MTB.

Only the road 11s cassette is different.

The old 7 speed cassette I doubt is in production anylonger..

yes, i understood it as:

 

as long as its a 10 spd cassette and a 10 spd derailer, it should be fine??

Im running 2x10, close enough to granny, but not granny...

Ja, but I'm thinking if you want the extra speed, add a bigger blade in front. Then you have the speed as well as the granny. Although that will be far more expensive because a new crank is then required.
