Do I need some special vacuum pump for this?

yes , but it's a really extreme meausre and probably wayyyy overkill after giving it some thought

brakes shouldnt be spongy after a fresh bleed , so either something is wrong with the brake itself or the bleed was not done properly

No - fill the syringe about half way - expel all the air - place a finger over the syringe hole and then reverse pull the plunger and see what happens - expel air and repeat a couple of times.

I am not aware that these levers can be "rebuilt" Usually if they start giving problems it's more like discard and replace. No service kit for shimano levers - nada.

As for vaccum bleed see what they do on the sram brakes, because the position of the bleed nipple on thw caliper of the xt brakes you most likely have a small bubble just there.

With the funnel in at the lever and the syringe and the caliper and pull and push on the the syringe a few times, you'll see tiny little bubbles coming out at the caliper, once these disappear close up at the caliper end.

Then pump the lever till all thw tiny air bubbles stop in the funnel, it helps loosening the lever from the bar and move it up and down at different angles.

If you don't come right drop me a pm and I'll take you through it over the phone

Thanks all I think I cracked it, problem seems to have been a bubble in the caliper. Took the caliper off and changed the angle and bled the brakes and a bubble came out so I will take it as that. So far the brakes seem good hope it stays that way....
