handlebars and stems also vary from person to person so why don't they take them off also ?  

That is why a custom build is always the most rewarding option.

 

Buy frame and add all the other bits you like best!!

Have a gen 1 tundra with ti rails that has come with me over a couple of bikes now, and is still my no. 1 saddle .... but it has to be setup right, if not, well it will let you know in no uncertain terms that you fitting it incorrectly!

I dont think that you even need the bike,

the guy can just clip the pedals on his shoes and walk about to see how they feel.

Cant do that with the seat though as the person may have to stick the seat in his pants and walk about to see how it fits.
