I wouldn't opt for the Butcher (if I were OP), but rather the Ground Control in GRID casing. 

 

This is a good call. I'd guess a butcher in grid would be a bit overkill maybe up the front. The slaughter is a great choice for a rear tyre but with my sensible hat on I'd call it a bit of a intermediate tyre and may be not for a newish person to the sport(?)... and with any hat on I'd say that a slaughter at the front may be a lot of fun it's not something I'd ever suggest. 

 

Also I'd pair it with a purgatory up front as it's a good trail tyre and the Spez' tyres are a lot skinnier than their measurements suggest.

Check your tire pressure gauge as well - it could be VERY out - easily as much as 0.5 bar good digital gauges are usually pretty accurate

Thanks for the all the replys. Thinking of going both with wider rims and wider tyres. Any recommendations as to who would be a good wheelbuilder in Jhb/Pta ? Got a costing from Nick but would like to explore all the options before I decide.

 

Also, any online stores that stock Spez tyres?

Can’t comment on specific tyres, but don’t forget about clearance on your frame with changed rims and/or wider tyres.

Thanks for all the help guys. Went with Maxxis aggressor (2.3) double down front and Schwalbe rock razor (2.35) super gravity for the rear. Seems to have fixed my stability issues if I run at about 2.80 to 3.10 bar.

 

This brings me to my second issue. After 10 km ride today my ass is absolutely sore. Being quite a large rider I ditched the factory saddle in favour of a topeak free_sx saddle but this doesn't seem to be helping. Did ride wearing a padded bib from rapid sport too. What would you guys consider the widest saddle ? Is there somewhere I could get a custom saddle made till I drop some weight ?

Get a bike fitting done if you can. This is where they adjust your saddle and handlebar positions, amongst other things, based on each person's individual dimensions and flexibility to optimise comfort on the bike. This prevents long term issues like sore knees and wrists. Saddle width has nothing to do with your size, but rather the spacing of your "sit bones", as that's what takes your weight when you're on the saddle. This is one of the things that will be measured with a bike fit.

I am not familiar with fitters in that area, but I'm sure other hubbers will be able to advise you. Perhaps search the Bikehub forums for previous hubber recommendations.
