  4. My first attempt. Came out great, I thought. This is the recipe I used. FLAT BREAD http://lekkerreseptevirdiejongergeslag.blogspot.com/2015/07/flat-bread.html My result: I changed the flour to about 200g cake flour and about 160g whole wheat bread flour. Also, I only used half the dough and rolled it out as thin as I could since I like thin, crispy pizza bases. Happy to say the flatbread came out exactly as I hoped, with a slightly chewy center.
  5. Now I want to learn how to make bread. I thought it might be easier to start with a flatbread, which I can then use for naan, pita or pizza. Any favourite recipes? I don't want to use self-raising flour. I bought a few packets of 10g instant yeast and a kilo of whole wheat bread flour. Make the flatbread by mixing together the flour, instant yeast, sugar and salt. Add the water and knead for 10 minutes to form soft dough. If the dough is too dry add more water, if too wet add more flour. Place the dough in an oiled bowl, cover with plastic wrap and leave to prove (rise) for 1 hour. Once proven, knock out the air and roll into a rough rectangular shape. Spectacular special effects, abysmal writing and terrible acting, made even worse by giving Ethan Hawke a small part where he shows how much better it would have been if they cast decent actors for the main roles.   8. Mutton. Grilled in oven with grill set to high for 7-8 minutes a side to brown it. Set aside to cool a bit, added roughly chopped veg (carrots, onions, sweet peppers) to dish, salt and pepper, some white wine vinegar. Placed mutton on top, drizzled with lemon juice and olive oil, added garlic and spice rub. Covered tightly in foil and cooked at 100C for 6 hours. Took mutton out and set it aside to rest loosely covered with foil, thickened the sauce with maizena, placed back in the oven under moderate grill for 15-20 minutes stirring occasionally. Potato wedges in air fryer Cut potatoes in thick slices. Covered in water for 30 minutes to extract starch, threw away water then dried wedges. Sprinkled oil and mixed with wedges to completely cover them, then added spices to taste (we like BBQ, cayenne pepper and garlic). Fried at 160C for 16 minutes, shook, then 6 minutes at 180C, shook, and another 6 minutes at 180C. Times will vary slightly depending on amount of potatoes and thickness of cut. Result Meat quite tender, but somewhat grey. Could have cooked at 80C rather, then meat might have remained pink and been even more tender. Carrots still quite hard. Could have cut them smaller and/or parboiled them for 5-10 minutes. Lots of sauce that formed from the meat juice that cooked out, so could have added more veg. Bonus Lots of meat and sauce left over. Can probably freeze sauce and use for soups and stews and use meat for wraps and stirfry. Satisfaction 7/10 Enjoyed it, quite tasty, but can be improved.

  10. Not sure about the weight. As you can see (compared to the loaf of bread) it's big enough that it won't leave a lot of space fitting into the oven. Since it's on the bone and we're planning to add a lot of lemon juice and olive oil, plus sealing it with foil, I hope it will cook tender without drying out. Sent from my Nexus 5 using Tapatalk

  14. Any tips? My sister brought us a skaapboud (included bread to give an idea of the size). We are thinking low and slow in the oven, with a lot of lemon, garlic and maybe some thyme.

"Japanese police have finally nabbed a nimble "ninja" thief who dressed in black and scrambled over walls to commit scores of break-ins over an eight-year career -- and were astonished to find he was 74. Police in the western Japanese city of Osaka had been stumped by a string of burglaries, their only lead being security camera footage showing an agile thief with a black neck-warmer pulled up to the nose and a parker hood down to the eyebrows. "He was dressed all in black just like a ninja," a senior official at the Kawachi police station told AFP. But the master thief made a mistake in May -- his neck-warmer slipped and his identity was revealed on camera. Police recognised their man as Mitsuaki Tanigawa, 74, who had a previous record of thefts. They then started watching the aged crook and tried to trap him. "Investigators watched him doddering out from his house like any other old man during daytime. He then went to an abandoned apartment room where he changed and waited until it got dark," the official said. "When he came out in the dark, he was all in black... He did not take ordinary streets, squeezing through tight spaces between houses and running on the tops of walls," he added. As investigators were unable to pursue the agile thief to catch him in the act, they finally pounced when he came back to his hideout at 4am after robbing an electronics store. Under arrest, Tanigawa said he "hated working and thought stealing is quicker," according to the police official. He has been charged for over 254 break-ins for thefts totalling 30 million yen ($260,000) over the past eight years. He later told the police that he needed only 10 minutes to sneak into a house, stealing mainly cash from people as they slept. "He's a pro.
