i assume mtb: short stem must be combined with a wide bar. I ride a 35mm stem with a 795mm bar. And I'm 1.66m short. (Med 2014 santa cruz 5010). Boils down to fit & geometry & leverage.

Have you spoken to the person that did the bikefit for you ?

When I had my bikefit done a 1-month follow up visit was part of the package ... specifically to make sure that the changes did not lead to "other issues", either in the handling and\or your posture on the bike .....

Just extending the stem may possibly remove the twichy issue, but lead to what else .... this can quickly evolve into chasing your preverbial tail ....

HOPE your bikefit specialist comes to the party and helps you to find the correct solution for YOUR bikefit ....

My race road bike is a 55cm with a 90mm stem, however my training bike which is more agile and can throw into corners is a 54cm with a 70mm stem.  I would be surprised that the stem makes a bike that twitchy that you have to consider changing.... perhaps you need just to get use to it.

What size stem did you have before the fitting?

the rule of thumb was always that if you're sitting comfortably the front hub should disappear from view under the handlebar.

And you can use anything up to about 130mm long on a road bike, but if the stem is longer than about 110mm you should invest in a good one so that it stays stiff.
