Get a grinder and go fresh, that ground coffee is killing your flavour...

Manual brewing is very trial and error till you get it right unfortunately. What grinder are you using and are you weighing coffee in/out?

Ya so I'm my little experience the further you push the bean the more flat the flavour becomes. The light to medium roasts retain more of those signature flavours! Dark hides all kinds of things. Kills it.
