Can anyone recommend what I should get?

If I get the garmin I would have to get a Garmin F70 as well to use when I spin.

The Polar I could use on the road bike and mountain and spinning.

I just dont like wearing a watch.

Is there anything else out there that I could use

If you don't like wearing a watch, its pretty straight forward. I got the Polar, coz I don't like fiddeling with this and fiddeling with that, a minimalist by category, I use it for everything, and don't stand a chance of loosing the unit off my bike etc

I have the Garmin Edge 500 Bundle.

I use the Garmin and HR Monitor on my MTB.

I use the Garmin, HR monitor and The Speed/Cadence sensor on my IDT.

Best thing I eva bought.(Apart from my Merida)

I have the Garmin 510 bundle and agree (don't have Merida though) :-)

Garmin Edge 800 - won't ever consider Polar again as long as I need to measure anything ! - I would rather guess my heart rate than use Polar - but that's just me having had an extremely bad service from Polar on my 750S

How do people lose their Garmin off their bike?

I've had a Polar for about 3 years now and have had quite a few issues. The strap gives in quite easily. I just replaced mine recently and used it for about 2 months and while cycling the Burger race, it started messing around with my heart rate again. This is probably the most annoying thing about Polar. Also, I'm not sure if they changed the system on the newer models but the weblink system on the older models is absolutely terrible. It literally takes forever to transfer data to your pc. I also find that the accuracy of some measurements are out. On an 85km ride, it tells me I've done about 79km. That's about 6km out.

Honestly, I doubt I'd go for Polar again.

They fall, Garmin/Bryton/Cateye etc etc etc gets bumped, rider forget to make sure its clipped in properly, and loose it at the next rough section...? or does this seem completely impossible?
