Is there any 1000m plus climbs that you can do around the western cape? Obviously not multiple climbs adding up to 1000m but a single climb in access of 1000m?

Maclears Beacon is 1000 m

Jonaskop, near Villiersdorp, is probably your best bet. I'm not sure what the access/permission is like but it looks like an epic climb.

We ride Jonaskop from time to time and have never had an issue.
